When you are in a city different than your home town , and it’s the festival season down there you definitely tend to miss the festivity and most importantly the food.
Every festival is marked with the food and Food preparations that remain with us wherever we go. Kati Bihu is among the most important celebrations in Assam and is in the start of the Kartik Maas ( month) and is a holiday in Assam. Home Chef Gitika Saika who is already known for bringing the unexplored and unknown cuisines to the table has curated a fresh new menu for the Assamese Food Promotion at Food Exchange in Hotel Novotel Aerocity for the Home chef series 1 and it’s worth a visit.
When I hear of the food festivals from North East , first thing that strikes me is their non veg dishes. But I was amazed to see 75% of the menu here was Vegetarian and was enjoyed by vegetarian & Non vegetarians equally.As you can see in the picture 6 of the dishes are all vegetarian and I have only covered half the menu.When it’s about Assam we can’t miss the wooden craft and the display acertains that people who have travelled less can spot the special things made in Assam and that boasts of the craft culture and mastery in this craft of the State.
The Starters had almost 4 veg and 4 non veg dishes on offer in additional to regular multi cuisine offering serving to the foreign guests staying at the hotel.
Pani Pitha Til paneer : A delicacy that’s wrapped in Rice Creps , is made in the live kitchen in front of you and served hot.
This is available in veg and non veg options. Small things , make a big difference. The chef has placed 2 seperate hot plates to make veg and non veg rice creps
Curry Patta Paneer : big chunks of Paneer well marinated and done in the Tandoor. Fresh flavors or Curry leaves added great taste.
Bengana bor : Thin slices of brinjal our bengan is done as crispy yummy pakoras.
Now moving to my favorites main course dishes and the use of potatoes in most of the dishes was a delight for a Potato lover like me.
Achari Paneer Sabji : Paneer made with baby potatoes in a achari flavors was really very nice.
Lau Bhaji : Bottle gaurd never was so delicious in a curated menu and was absolutely comforting. Made with peas was mild on spices and good to have even without bread.
Kola Chana Paleng : Brown grams cooked with green looked so healthy on the face of it. And made a space for itself in my plate for my love of black grams and greens.
Aloo Pyaaz Paat : when you explore new Cuisine you get to know of the common thing among language and dishes. Aloo pyaaz is a seasonal dish which is made while the onion greens are available in the market and this is one dish that tasted very similar to what we have in North India. Aloo pyaaz paat referred same as we do in Hindi.b
The best part about this pop food festival is that handpicked dishes are included keeping in mind the guests at the hotel and focus is more on exploring it along with the main food. And also a big thanks to the cause of bringing the home chefs to a platform like this and powering their dishes to reach out to a wider audience.
