Experience Contemporary Indian cuisine by Chef Nishant Chaubey at Sattvik

The vegetarian in me is super excited to share the most wholesome experience of exceptional culinary treat of some outstanding fusion of flavors using some extraordinary food combinations at Sattvik with Chef Nishant Chaubey. If you have never been to Sattvik ,you must know this place is in Select CityWalk Mall Saket New Delhi and offers an amazing Vegetarian fine dining experience.

Coming to the special menu curated by Chef Nishant Chaubey at Sattvik, Chef has really played well with the seasonal ingredients and fusion of flavours to introduce new dishes.

Drinks – Sattvik Style

If you love adding something to drink while you relish your meal or look at starting with something to drink. The new menu offers some really cool refreshers that use fresh preparations in the kitchen and has very less preservative based mocktails, sounds exciting right so here’s what we tried our hands on – Aam Panna and Nariyal panni ( straight from the coconut), And what I really wanted to try was super refreshing sugarcane juice ( yes that too)

Jamun Chaat

The chef has an amazing way of mixing up the seasonal fruits into a relishing chaat style, the earlier menu had mulberries and this one broughtht back the same memories but the fusion this time was with Jamun. Yes a offering of monsoon that’s loaded with health benefits is combined with makhana’s in a chaat style that’s absolutely worth trying.

Raj Kachori

If you are chaat lover and you have tried Raj Kachori at Haldiram’s or Bikanerwala then let me tell you the Raj Kachori at Sattvik is way different, mostly because chef has used exotic ingredients like Avocado, in place of normal curd the foamed curd is used which is a delight to have. The Raj Kachori is served with a twist too not like the stuffed portion up it’s upside down and also the chunks of raw mango adds to the chatkhara in the chaat. Another Food item on the menu that’s worth trying.

Sweet Potato Kasundhi butter sauce

An appetizer that was full of drama and spices quite literally. Now if you remember the chilli honey peanuts served at Yo china long back , hold it on your taste buds, now let’s add Kasundhi ( Mustard Butter Sauce ) to it to give it a pungent twist. The sweet – Sweet potato and Litchi are wrapped in red chilli and honey and are further tempered with Kasundhi now they are caramelized right on the table using the flame. So it’s a sensational presentation where you absorb all the drama with your eyes, you smell the caramelization that happens on the table and then you dig in to this heavenly delight. The garnishing is done with crunchy masala peanut so even if you talk of textures there are multiple texture all in one appetizer – pulpy Lichi, Buttery sauce, Soft textured sweet potato and crunchy peanuts.

And trust me the flavors here are outstanding – sweet, pungent , spicy all at once.
