Stuffed Parwal on a bed of Paneer

So this recipe is dedicated to the parwal love of my hubby. As much as I dislike this vegetable, &  he simply loves it.so I m on a constant mission to create new dishes out of this so boring vegetable to please him.

Though this one is the most tolerable recipe so far, as it had one of my favorite ingredients Yes Paneer ! in it.

Ingredients

Parwal( snake guard ) preparation 

Take 7 peices of large size parwal , grate 1 and half peice and peel the skin off of rest 6,  and remove the seeds from inside to stuff them. 

For stuffing

  • 1 Big onion finely chopped
  • 1 Big chopped tomato 
  • 1 green chilli
  • 1 spoon vegetable masalla
  • Few cloves of chopped garlic 
  • Cumin seeds 
  • 100 gm Grated Paneer 
  • 1 grated parwal

For bed of Paneer 

  • 250 gm Paneer ( grated. Use 100 gms in the stuffing from this)  
  • 1 Big onion finely chopped
  • 1 tea spoon oil 
  • Cumin seeds
  • Spices as per taste ( red chilli powder, coriander powder,  turmeric,  salt) 

    For the stuffing 

    Take a tea spoon oil in a pan and add cumin seeds , then onions, garlic  green chilli and when they turn golden brown add vegetable masala followed by tomatoes and the grated parwal ( microwave it for 5 minutes before adding ) and in the end grated Paneer. Stir well and let it cook for 10-15 minutes meanwhile prepare the bed of Paneer to serve this.

    For Bed of Paneer 

    In case you want you may skip this and stick to the main recipe as this is more for presentation. The recipe is similar to Paneer Burji. Take a pan add oil,  before you add cumin seeds,  use this oil to fry the shells of Paneer till they turn light brown 

    Now the oil should be enough to turn the parwal shells brown not to literally fry them. Once this is done use the same oil to make Paneer.

    Add cumin seeds,  chopped onion followed by all masala (spices as mentioned above)  now add the grated Paneer.

    Now set this in a plate while we are yet to stuff our stir fried parvel.

    Cut the parwal into 2 halves and fill them with the stuffing. Put them in microwave and cook for 10 min and then lay them on the bed of Paneer. 

    You can have it as a starter as they are crispy and yummy. Or you may try it as a side vegetable with your main course. Optionaly you can also add gravy to this to make it a gravy Dish.
